Led by two longtime collaborators and hospitality strategists, Ultimate Ultimate brings serious experience across bars, restaurants, luxury hotels, FOH leadership, programming, and team development.
We came up in the rooms we now help design. From the service well to the back office, between us we've opened notable rooms, led large teams, rebuilt broken systems, and shaped the guest experience across independent spots, corporate groups, and luxury hotels.
With over 25 years of combined experience and fortes in beverage, music, culture, and operations, we know how to make things feel good and run smooth.

With a foundation in wine, culture, and hospitality leadership, Olivia brings a thoughtful and radical approachability to beverage and service.
She is a Certified Sommelier through the Court of Master Sommeliers, with extensive experience shaping beverage programs and leading teams across restaurants and multi-outlet hotels. With a background in journalism and cultural storytelling, she is known for creating programs and training environments that balance rigor, authenticity, warmth and fun.
Meet Olivia
Nicolle’s background spans hospitality leadership, operational strategy, and brand-led experience design within restaurants and multi-outlet hotel environments.
Her work sits at the intersection of operations & partnership strategy. She is known for finding clarity in the complex through developing systems and infrastructure, and bringing life to spaces via thoughtful programming and activations.
With formal WSET wine training, and a penchant for a good playlist and a dimly lit room Nicolle translates vision into experiences that tell a cohesive story.
